Good Taste is the Worst Vice

My mom’s chicken stew

Whenever my mother visits, I ask her to make chicken stew.  It’s filled with vegetables, nutritious as well as delicious – the food equivalent of a hug.  And it freezes beautifully in individual portions, ready for me to heat up on chilly evenings when I’m hungry and facing an empty fridge.


It’s perfect comfort food.  

Here’s the rough list of ingredients – no need for a precise recipe.

  • 2-3 boneless, skinless chicken breasts
  • 2-3 zucchini, sliced
  • 2-3 yellow squash, sliced
  • 4-6 carrots, sliced
  • 3-4 Yukon Gold potatoes, cut into chunks
  • 1-2 sweet potatoes, peeled and cut into chunks
  • 2-3 small turnips, peeled and cut into chunks
  • 1/2 bag frozen petite peas
  • 1/2 bag frozen corn
  • 1 small onion, diced
  • Lots of chicken stock (she uses Better than Bouillon)
